in Tamarack's A Taste of West Virginia Food Court.  
  Here is a recipe you can try at home:

 

 Freestone Peach Cobbler                            Tamarack's Peach Cobbler

 (Makes 2 cobblers in 9 x 13 baking dishes)

 Topping                                     Cobbler Filling
 3/4 cup           butter                                6 lbs.   Freestone peaches (canned)        
  2 cups           sugar                               ½ cup    brown sugar
  2                     eggs                                 ½ cup   corn starch
  ½ tsp.             vanilla
  3 ½ cups    flour 
  2 tsp.         baking powder

  1)    Preheat oven to 350º.  Spray two 9 x 13 inch baking dishes with non-stick cooking spray.
  2)    Drain peaches, preserve juice. 
  3)    Pour reserved juice into saucepan.  Bring to boil.
  4)    Add sugar and corn starch to boiling juice and cook until clear and thick.    
          Pour over peaches.  Mix well.  Pour peach mixture into the baking dishes.
  5)    Cream butter, sugar and eggs well.  
  6)    Combine baking powder and vanilla.  Add to creamed mixture and mix well.
  7)    Lay dough on fruit filling in thin spoonfuls.
  8)    Bake 30 - 35 minutes.
